Mediterranean Summer Salad



1 Large Cucumber quartered lengthways and cut into 1-inch pieces

½ Red Onion, sliced into long slivers

2 Cups Tomatoes, large dice

1 Yellow Bell Pepper, large dice

6-8 Radish quartered

¼ Cup Mint, fresh, rough chopped

1 Cup Parsley, fresh, rough chopped

1 Teaspoon Salt

1 Teaspoon Black Pepper

2 Lemons, Juiced

¼ Cup Olive Oil


-Combine all ingredients in a large bowl

-Toss to combine

-Serve chilled

-Can be made up to 2 hours in advance
